** 2009 Highland Gold – Late harvest Sauvignon Blanc ** Winemaker’s tasting notes: The rich flavours of this wine were made in the vineyard when the vine cordons were cut and the bunches left hanging on the trellis. The grape flavours were subsequently concentrated by part drying before being harvested and fermented in the winery. Winemaker’s tasting notes: This Pinot Gris was picked at optimum ripeness and fermented in stainless steel fermenters at cool temperatures to retain the fresh fruit flavours and aromas. A small parcel (15%) was matured in barrel to add further complexity and texture. The wine is a pale straw colour with a slight green hue.
