The Letter “B”

Back palate: It really is as easy as it sounds. Once the wine gets past the initial taste sensation, it will sit at the back of the mouth. The taste sensations will then be slightly different. Accessible: Not necessarily the bottle within arm’s reach, an “acccessible” wine is one considered to be easy to drink, without too much acid. There are some, of course, who would argue that if it’s wet, it’s accessible. Acid: Remember the 70s? Not many do.
